Linda's favorite for February
Every Bed and Breakfast has it's favorite recipes. Each month Linda will share one of her favorites. But don't ask for the book. She keeps that under lock and key!

Linda's Corned Beef Hash

3 cups corned beef brisket, cooked and chopped...1 onion, chopped...3 large potatoes, peeled and cubed...1 tsp salt...1 tsp. pepper...2 tablespoons vegetable oil....

Fry onions in frying pan with oil until brown and add potatoes. Let fry until potatoes are almost done then add corned beef, pepper and salt to taste. This is a great treat reheated.

Enjoy!

Linda's Hints

Teach an old Bag new tricks!

Place freshly made French-fries in a paper bag, add salt, and shake. In one easy motion the excess grease is absorbed and the potatoes are salted.
..
To keep mushrooms from becoming sliimy, always refrigerate them in a grown paper bag-NEVER plastic. Paper lets the mushrooms breathe while holding in the humidity that keeps them fresh...

Lettuce and celery will keep longer if you store them in the refrigerator in paper bags instead of cellophane. Do not remove the outside leaves until ready to use...

To drain fat from foods, cover two paper bags with one sheet of paper toweling....

When baking a pie, put it in an oven browning bag or a plain paper bag. Cut four or five slits in the bag and twist shut. Place on a cookie sheet and bake ten minutes longer then required time. Crust will turn a beautiful golden brown and oven spills are eliminated!
